I chanced to have a piece of pie and coffee one evening while waiting for her to get off-shift. The boy knew how to cook. The crust was light and flaky, redolent of lard and freshly milled flour -- none of this library paste pie shells you usually see. The coffee was strong, flavorful, but not bitter ... from one of those 120 cup drip dealies! They routinely got lamb chops, veal(!), marvelous stews and potages, all homemade. I swear, when he left, the staff wept! The replacement was just a food service cook and prepared everything via the steam kettle.
